Also known as the Iskender kebap, the Bursa kebap is a meat dish known as one of the best kebaps in the whole country. It was first made by Master Iskender of Bursa around the end of the 19th century (1867). Döner kebap, meat roasted on a vertical spit, and other grilled meats are laid on a base of finely cut pita bread and served covered with melted butter, tomato sauce and accompanied by yogurt. This dish was first cooked in a kebap restaurant in Bursa's Kayan Bazaar and then spread throughout the city then in the whole country.
